1 1/4 cups dry black beans (soak overnight then cook according to directions on package. If desired you can used drained, canned black beans)
3 small onions
3 red peppers
3 ribs celery
2 tsp oil
1 bottles of spaghetti sauce (I use ragu)
4 TBSP Tex mex seasoning
1/2 tsp Crushed red pepper flakes
2 tsp onion powder
2 tsp garlic powder
Dice onions, peppers and celery. Heat oil in a heavy, deep pot. Soften diced vegetable in oil.
When vegetables are cooked, add spaghetti sauce and beans.
Add seasonings. Simmer until ready to serve.
I serve my chili with homemade French bread. It's perfect for sopping up the sauce.

ReplyDeleteTex mex seasoning is a seasoning blend made by Clubhouse (they are a spice/seasoning manufacturer). I buy mine at Costco. You can also use taco seasoning.
