Vegetarian Black Bean Chili

This is a super easy vegetarian recipe. There are no exact measurements and no way to screw it up. Whatever way you make it, it's always good.


1 1/4 cups dry black beans (soak overnight then cook according to directions on package. If desired you can used drained, canned black beans)
3 small onions
3 red peppers
3 ribs celery
2 tsp oil
1 bottles of spaghetti sauce (I use ragu)
4 TBSP Tex mex seasoning
1/2 tsp Crushed red pepper flakes
2 tsp onion powder
2 tsp garlic powder

Dice onions, peppers and celery. Heat oil in a heavy, deep pot. Soften diced vegetable in oil.

When vegetables are cooked, add spaghetti sauce and beans.

Add seasonings. Simmer until ready to serve.


I serve my chili with homemade French bread. It's perfect for sopping up the sauce.

  4. Tex mex seasoning is a seasoning blend made by Clubhouse (they are a spice/seasoning manufacturer). I buy mine at Costco. You can also use taco seasoning.
